Energy Bites!

So I have been seeing in various health mags, on pinterest and on some of my blogs I follow are these delicious things called “Energy Bites”. I decided to give them a try, I love oats, chocolate, honey, coconut and I love the shape they are in (you know why I couldn’t say the actual shape).

Here is how its done:

Ingredients:

  • 1 cup dry oatmeal
  • 2/3 cup coconut flakes
  • 1/2 cup peanut butter
  • 1/2 ground flaxseed or wheat germ
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tsp. vanilla

Directions:

1. Stir all ingredients together in a medium bowl.

2. Let “batter” chill in the microwave for 30 minutes.

3. Roll into 1 inch balls or whatever size you desire

4. Put in tupperware container in the fridge

This is my absolute favorite PB…it is only 2 points for 2 tbsps and is much lower in fat than regular or low fat PB. It is best mixed in with oatmeal or energy bites. They also have chocolate flavored (think Nutella but better for you), this flavor is banana!

Try this in yogurt, oatmeal, cereals, breads, muffins etc. Flaxseed is good stuff

Get ready to get your hands sticky, icky and also your camera if you are dumb and don’t wipe your hands before snapping pics.

My Thirsty Thursday outfits have changed quite a bit since college…Def gotten sexier for sure.

This is about how big I made the energy bites, they are really the perfect “bite”.

They turned out great…this will be new experiment in the kitchen, along with finding the perfect pancakes. I will say that one bite may not be enough, so don’t pull out the entire container and go to town (because you could)…I took two “bites” to school today in “perfect portions” container and only ate one! Hopefully no one eats that other one over the weekend or else they will have to deal with me. I am tough.

In other news… RR made our apartment the new Chipotle grill last night! She got the recipe from a great food blog…check the recipe out here!

Tonight was a very sad moment, I had to say “no” to happy hour so that I could come to Starbucks and work on grad school homework. Booooo.
