Perfecting Leftovers and Some “Bad News”

Let’s face it…sometimes we all don’t have the time to make a beautiful, delicious, new meal every night. Maybe if I didn’t work, have grad work, run, read 500 people’s blogs, etc…I could possibly cook a new meal every night. I remember growing up and my mom always cooking an amazing meal most nights (except for when Dad was traveling, don’t get me wrong even the dad-isn’t-coming-home-meals were pretty incredible…now you know why I have a food obsession).

Tonight I decided I had to do something with the broccoli and half of an onion that were staring me down as they turned brown. Since I love my roasted cauliflower so much I decided to try it with broccoli.

Roasted Broccoli and Onions

  • Preheat oven to 400 degrees
  • Toss two heads of broccoli and an onion with 2 teaspoons olive oil, 1 clove garlic minced, 1/2 teaspoon sea salt, sprinkle of pepper
  • Place on a cookie sheet in the oven for 15-20 minutes
  • Sprinkle 2 teaspoons lemon juice and serve!

I will say that something must’ve gone wrong with my salt measuring because it was very salty, like just swam in the ocean salty. Also, it is not as good as the roasted cauliflower…just so you won’t be as disappointed as I was. But it is an easy side to go with leftovers…

Roasted broccoli and Onions, Scoop of Mushroom/Quinoa Pilaf and a piece of chicken with some yummy bean salsa. Seeee leftovers can be delicious!!!(Thanks for teaching me all I know about perfecting leftovers Mom:)

Alright…on to the “bad news”…today I trudged to the dentist right after work on a Monday (this should’ve been bad enough) but then the dentist told me I have a cavity!! I am 25 years old and get pimples and cavities, it must be from teaching middle school. So it looks like I not only need to lay off the sweets for my health/waist line but also for my teeth that are supposedly rotting one by one. All I have to say about that is…

Booooooo! Of course this news had to come 3 weeks before the NUMBER ONE holiday for candy. I can still drink coffee though, because that is probably SO good for your teeth too.

Mama Trick: When I was home this past weekend my mom told me that in order not to “cry” when I cut an onion I should light a candle near the onion. I am sure my mom is “crying” that I am sharing this with you as I kinda/sorta/maybe told her “that is stupid”…but it really works!! Always trust the mama tricks, always.

As for some running news…I tried out my NEW Brooks Ravenna 3’s today (I always run in Ravenna’s but this was my brand new pair) and they felt AMAZING! My feet are so thankful, maybe my blisters will go away too before November 18th…one can dream. RR and I were looking at our Marathon race outfits tonight…we will be going to try some on soon. Maybe I will post pics and you all can help us pick which one is the BEST/FASTEST looking.

Today I had a “grateful” thought…I am grateful for this marathon because RR and I will PR no matter WHAT our time is because it is our first marathon!!!!! YAY US! (I really like CAPS today, sorry).

Have any tips on how to get rid of cavities or how to trick the dentist in to thinking I floss every day and don’t eat 25 lbs of fruit and candy weekly?
