Banana Bread Oatmeal Pancakes

A few posts ago I wrote about how awesome breakfast is and how sometimes I like it more than dinner! Well the other night I wasn’t feeling s salad or a ton of veggies so I made some of Peanut Butter Fingers Banana Bread Pancakes…they were SUPER easy and delicious. Oh and they also have “runner’s crack” in them:)

Banana Bread Oatmeal Pancakes

Ingredients:

  • 1/2 cup oatmeal
  • 1/2 banana, mashed
  • 1 egg
  • 1/4 cup plain greek yogurt
  • 1/2 teaspoon cinnamon

Directions:

  • Mix ingredients together
  • Spray pan or griddle with cooking spray and put on medium heat
  • Scoop pancake batter onto pan and make 4 small pancakes (or 2 large)
  • Allow to cook for 2 to 3 minutes (until edges are golden brown)
  • Flip and cook for about two more minutes
  • Top with syrup, slices of remaining banana, and a dash of pumpkin pie spice

They kind of look like the oatmeal but in pancake form!

These were so quick to make!

Happy Friday:) Today is an AWESOME DAY…

number 1. I don’t have school today, all Fridays should be spent as non-working days (which President feels this way too? that is who I will vote for!)

number 2. We leave today to go to Ashley’s wedding!!!!!!!! I love weddings, plus I will get to see ALL my favorite college friends. FUN FUN FUN! I will be doing a wedding post on Sunday, so stop back then for some pictures and reminiscing. Tomorrow will be a post about the “easiest brussel sprouts”…

I am currently eating my pre-run meal of oatmeal, PB, banana and some raisins. It is 5:24, our run is scheduled for 7am and its only a 12 miler today:) YIPPEEEE (never thought I would be so happy to “only” run 12 miles)
