I haven’t blogged for about a month. Not sure why I have been so “silent”…just busy with the usual stuff and blogging always seems to take the back burner. Maybe April will bring some fun Spring Posts..notice I don’t hold myself too accountable (maybe is a good word). I am taking a little break from grad work this morning…I am luckily on “Spring Break” so I don’t mind doing grad work all day and I am going away this weekend with Andrew and his family so I need to get ahead on the work so I can enjoy and relax.
Here is what’s been up…
Allie and I finished another half marathon…this time in DC…
I decided after this one I need a “running break”…I haven’t signed up for any more races and haven’t really been in a running mood lately…I am OK with this, it was a crazy running year! 4 half marathons and a full marathon. That is a lot for me, and I need to change it up!
My sister and Pat are expecting a baby boy in July! (that Cosmo is all mine)
The whole gang in Doylestown on Good Friday (don’t worry those little sliders are black bean burgers).
I am still bitter that Pat didn’t speak a little louder before I dug in to my salad that had BACON bits on it.
Cute little chick Easter eggs…my mom tries to take traditions away from us, but she ALWAYS follows through…we even get awesome Easter baskets every year. I just wish other people in my family got as excited as I do about dying Easter eggs!!
Even though Easter Sunday in Greenwich was a little gray this year… the family & food made it bright and wonderful as usual. I am so BLESSED with such an incredible family.
I have been reading books and blogs about clean eating recently. It is a new obsession after I watched the movie Hungry for Change (go watch it…now!)
I have been attempting a more “Paleo” diet this week..no grains, no gluten, no wheat, no dairy, no sugar.
I know it sounds torturous but I am feeling much better…I am going to give it a few weeks to really judge.
I don’t miss oatmeal too much!
I made a Paleo Banana Bread today that was so easy and delicious!
- 3 mashed bananas
- 1 tsp cinnamon
- 1 tsp sea salt
- 1 tsp vanilla
- 1 tsp baking powder
- 3 eggs
- 1/2 cup almond butter
- grease pan with coconut oil (healthy fat)
- add a handful of walnuts
- bake at 325 for about 35-40 minutes
My parents are currently in Switzerland in a town called “Evian”…looks pretty gorgeous to me!
I am surely hoping my mom can survive Europe with out me and Miriam (our tour guide from our France/Spain trip this past summer)…
I miss France! Who wants to go back with me??
Alrighty, time to head to BodyPump, then it is back to grad work for the day!
xoxoxo !
