I mentioned in a post here that I was giving Paleo a try. The recipes you can find are incredible. Easy, delicious and obviously pretty darn good for you. I am a sweets addict, so when paging through Paleo cookbooks on my Kindle I was drawn to cakes, muffins, breads and cookies. I attempted my second Paleo “sweets” last night…my first was the Paleo Banana Bread…
Paleo Carrot Cake Muffins
Ingredients:
- 2 1/4 cup almond flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ground allspice
- 1/2 tsp ginger
- 3 tbsp coconut oil, melted
- 3 eggs
- 2 tbsp honey
- 1 tbsp vanilla
- 3/4 cup shredded carrot (about 1 medium carrot)
- 1/2 cup walnuts
- 1/4 cup shredded coconut (unsweetened)
Directions:
Preheat oven to 350. Mix dry ingredients (up to coconut oil). Whisk together eggs, honey, & vanilla. Add to dry ingredients and then stir in carrot, walnuts and coconut. Bake for 18-20 minutes. Let cool. Enjoy:-)
Caveman Chili and Cauliflower Rice
Ingredients
- 2 lbs ground beef (I used grass fed)
- 3/4 cup chicken broth
- 2 green peppers (chopped)
- 1/2 onion (chopped)
- 1 tsp cumin
- 1 tsp cayenne pepper
- 1 tsp sea salt
- 1 tsp pepper
- garlic
Directions:
Saute the peppers, onions and garlic in olive oil until they are soft. Pour in ground beef and let it brown for a few minutes. Transfer all ingredients to crock pot and cook on low for 6 hours. I also added 1/2 avocado and some grape tomatoes to the top. YUM
Cauliflower Rice is SOOOO easy and delicious…take a head of cauliflower chop it up a little and place in a food processor…grind or chop it up then place in a microwave for about 5 minutes…put some garlic/salt/pepper and wham!
and something that is not Paleo……
I think I can handle less than 50 days until summer:-)
